This is a recipe for chips, but not made from potatoes! Because chips don’t always have to be potatoes!
Courgette…….washed and cut into chips
Make a batter from flour, egg and a little oi. Dip the chips into the batter.
Heat extra oil in a pan and carefully fry the chips…….matter of seconds. Drain on kitchen paper and serve.
The courgettes can instead be sliced, dipped into batter the same and fried.
Very different but very nice!

Again, as much or as little as you like of the following:
Tomatoes………Garlic…….Parsley….tiny red pepper.
Chop and blend all together, then turn into a pretty bowl, crusty bread for dipping and enjoy.

BABAGANOUSH (or Mutabel) is a recipe for a lovely dip which uses local produce and was passed on to me by my good friend Trish:
Use as many or as much of the following as you wish according to taste…..
Aubergines….Garlic…Tahini…Salt…Lemon juice
Roast Aubergines and scrape out flesh. Add everything else and mash.
That’s it and it is lovely!
